Granny’s Homemade Soup!

My nose is inclined to pick up the intricate changes in the the seasons from summer to fall. Something in the air changes and my eyes are visually drawn to the leaves hanging on our trees, most are still green, yet at the ending of this summer, on Labor day, the colors have started to turn early, as I am seeing hints of yellow, red and orange! Our little wild animals in the yard are scurrying around in frantic paces, as if they feel winter is coming early this year. I am anticipating a long winter myself.

I help our animal friends out by putting out on the porch bowels of wildlife food for birds and squirrels to store up for winter.

Before the Big Winter Wind blows I get to enjoy the most memorable time of year;ย ย  Autumn- September 23, 2019 – December 21, 2019, where nights get longer and days get shorter. The time change is fast approaching when at five pm it will be dark outside. Its time for hoodies , boots and sweaters, cute hats and mittens, fire pits , roasted smores and yummy decadent coffees and hot chocolates. Aren’t you just ready for fall?

I am thankful for the approaching cool crisp breezes, the wind in my hair and for all my allergies to be gone! Hurricane Dorian kicked up a reboot for me and currently my sinus and swollen eyes are in disarray.

My mothers front porch has always been a place of peace and reflection for me, during this past summer hot days , I avoided it at all cost because our southern mosquitoes, have been relentless and have not faded away yet. I read that you can keep them away with candles and plants, yet they still bite me, unmercifully, as a child and as an adult, according to one page this could be due to my blood type, guess I am just sweeter than everyone else! LOL.

Fall is a season of comforting to me, I get to experiment and create new soups and stews for the cold days ahead. I pray over everything when I am cooking, asking for healing and blessings by all who consume what I prepare. Cooking for me is a very deep act of LOVE! When I bring the food to the table, I sing…..This is because I Love You ! Soup is one of my favorite meals to cook, and honestly I just don’t think you can mess up a good pot of soup. I always use the same ingredients in my favorite soups, yet they never taste the same, reason why is when it comes to spices, I go by instinct, I shake a little more of this than last time, and I don’t ever measure out spices.

Tonight I am making simple vegetable soup : 1 pd hamburger, 1 sweet onion, 1 can veggie all, 1 can diced tomatoes and 1 can hunts tomato sauce.

Spices I like to add: Oregano, Basil, Italian, Dill, Garlic, Poultry, Salt, Pepper, Parsley, a sprinkle of sugar, a dash of vinegar

First slice and fry the onion,

Second crumble in raw hamburger, cooking until meat is brown and tender, not red.

Then add all three can of sauce and veggies.

Stir together all ingredients. Bring to a boil, lower to simmer 30 minutes.

Boil elbow or twisted noodles about 2 cups, drain and then add to 2 cups to soup base. Wait about 15 minutes and enjoy. Yummy! Serve with salad, or rolls, or both!

  1. This looks oh so yummy! I make something similar. I have added sauce before, use drained can of vegall , can of green beans, drained can of whole kernel corn. Onion powder, garlic powder, jarred garlic cooked in with hamburger, salt, lots of black pepper, Tonyโ€™s. And I do add elbow or noodles like you do! You are right, it canโ€™t be messed up! ๐Ÿ’œ๐Ÿ˜ ๐Ÿ

          1. We have different types such as corn, chicken, beef, fish (which we call fish broth) chicken foot, veggie and others we create as well. So the corn, we cut them in circles, need the flour for the dumplings, our local pack seasonings (Maggie Flavour de Pot) spaghetti, veggies such as (sweet peppers, pumpkin, chive, pimentos.) Vegetable oil and water. So you put the water to boil. When bubbles are seen, add in some oil, and add in diced veggies, with the Maggie pack seasoning. Stir until veggies are slightly cooked and the water will turn yellow from the pack seasoning. Add your corn and dumplings. Let that cook for about 10-20 mins. Then lastly add the spaghetti. Then let cook for 10-12 mins. Extra spices/ pepper can be added. Add salt. Switch off when spaghetti is soft/cooked. Serve in soup bowl. And that’s it! There you got yourself a Trini Corn Soup.
